How to accommodate a leftover of soba noodles? With this simple starter. Although there’s no need for the noodles to be leftover, of course :-)

For two plates, you will need:
– about 1&1/2 cup soba noodles, cooked and cooled
– 3 tbsp fresh pomegranate seeds
– crumbled feta cheese
– romaine hearts
– 1 tbsp fresh pomegranate juice
– 2 tbsp olive oil
– 1 tbsp balsamic vinegar
– Dijon mustard

For the dressing, mix together 1/2 tsp of Dijon mustard, the balsamic vinegar, the olive oil and the pomegranate juice. Set aside.

To prepare your plate, put some romaine leaves first, add the soba noodles. Then sprinkle them with the pomegranate seeds and the feta cheese. Season as you like. Add the dressing. It’s ready!
