Now that we know how to make pralin, we can make plenty of recipes with it ;-)

Here is the recipe for very French cookies: les madeleines
For about 15 madeleines:
– 6 tbsp butter, softened
– 1/3 cup + 1-1/2 tbsp sugar
– 2 eggs
– 1/3 cup + 3 tbsp all-purpose flour
– 1/2 tsp baking powder
– 1/4 tsp salt
– 4-1/2 tbsp pralin powder

Preheat your oven to 400F.

Mix together the flour, the salt, the sugar and the yolks. Slightly beat the egg whites and add them to the batter.
Add the butter and mix thoroughly. Add the pralin and mix until combined.

If you want the cookies to look like French madeleines, you will need one of these molds:

You can find one at William Sonoma’s or NY Cake’s.
If you don’t have the right mold, you can use mini-muffins cups.

Put a spoonful of batter for each madeleine.

Put the mold in the oven for about 10 minutes (watch the cookies carefully). Take them out of the mold as soon as you get them out of the oven. Let them cool.
