I mentioned pralin before. We love pralin in our house. These cookies are just delicious as a snack, as a dessert or… just because!

I used some of the pralin my mother sent me from France this time:

It’s a little coarser than the one I was using in France, but that is just fine for these cookies.

This recipe is an adaptation of this QuakerOats recipe.

So here’s what you’ll need for about 30 cookies:

– 1/2 cup (1 stick) + 6 tbsp butter, softened
– 1 tbsp firmly packed brown sugar
– 1/4 cup pralin
– 1/2 cup granulated sugar
– 2 eggs
– 1 tsp vanilla
– 1&1/2 cup all-purpose flour
– 1 tsp baking soda
– 1/2 tsp salt
– 3 cups oats
– 1 cup dried cranberries

Pre-heat your oven to 350F.
In a large bowl, beat together the butter and the sugars.

Add the eggs and vanilla. Beat thoroughly. Smile ;-)

Combine together the flour, the baking soda and the salt. Add to batter. Mix well. Notice how beautiful it is :-)

Add yummy pralin and mix again. Lot of mixing for one day!

Add oats and cranberries and again, mix.

Your batter is ready to be divided into individual cookies :-)
Take a tablespoon to make and drop the cookies onto parchment paper, on a cookie sheet.

Bake the cookies for about 10-12 minutes, until they have a nice, golden color. Let them cool for 1 minute or so, transfer to cookie wire rack and let cool completely.
